Amaranth, one of the most nutritious of the ancient grains, is also one of the most beautiful. Though many amaranths have been selected for yield and adaptation to local climate, some have also been bred to accentuate their ornamental qualities. Prized cultivars produce giant vertical spires, huge walls of colorful spikes, and, in the case of Coral Fountain, showy, cascading plumes. The stunning plants feature draping blooms in a peach-coral-amber hue that deepens as the season moves along. As the art suggests, this variety makes a dramatic cut flower.
Direct sow in the spring after threat of frost has passed in a sunny, well-drained spot. Thin seedlings to 6-10 inches apart. Amaranth tolerates fair fertility and dry conditions, but more fertility and moderate water will yield lush and tall plants. Height varies with the amount of fertility in the soil.
